Carole's Chocolate Mint Marble Cake

170g margarine or butter

170g castor sugar

3 large eggs

170g self-raising flour and 11/2 level teaspoons of baking powder sieved together


2 dessert spoons cocoa, blended in a little hot water

Green colouring

Few drops peppermint flavouring


85g margarine or butter

225g icing sugar, sieved

1 tablespoon coffee essence or very, very strong black coffee

1 tablespoon milk


To make cake:

Grease and line an 8 inch round baking tin with greaseproof paper.

Turn on oven and set to 160°C (gas mark 3).

Place all cake ingredients in a mixing bowl and beat with a wooden spoon until well mixed (2-3 mins).

Divide mixture into 3 bowls, colour one with blended cocoa/water, colour the second with green colouring and add peppermint flavouring, leave the third portion plain.

Place a tablespoonful from each bowl in the prepared tin; and continue with a tablespoonful from each bowl, in turn, until all the mixture is used and more or less level in the tin.

Place in the centre of the prepared oven for 1-1½hours.

Test the cake by inserting a slender skewer or toothpick in the cake, and then withdrawing it. If there is no cake mixture or moisture on the skewer when it is withdrawn the cake is ready.

Remove from oven and set aside to cool.

Note: with a fan oven lower the temperature and/or the cooking time a little.

To make icing:

Place all icing ingredients in a mixing bowl and beat together with a wooden spoon until well mixed (2-3 mins).

Spread around sides and top of cake, swirling with knife.
